Beef & Vegetable Casserole

Beef & Vegetable Casserole

1 package of quick frozen mixed vegetables
2 cups of cubed leftover pot roast
1 can of condensed mushroom soup
1/2 cup of leftover beef gravy or beef stock
2 cups of leftover mashed potatoes
1 tablespoon of butter


Cook the vegetables for 5 minutes. Drain. Mix with pot roast, soup, and gravy or stock. Place in a 1 1/2 - 2 quart casserole. Cover with mashed potatoes. Dot with butter. Bake in 400ºF. oven for 30 minutes or until well browned. Serves 4. If you have leftover vegetables by all means use them instead of the frozen ones.
