| Lebkuchen (German Honey Cakes)

1 cup of honey
3/4 cup of light brown sugar
1 Lemon, juice of
2 Eggs, beaten
2 1/2 cups of flour, sifted
1 teaspoon of baking soda
1/2 teaspoon of nutmeg
1/2 teaspoon of cloves
1 teaspoon of cinnamon
1/4 cup of almonds, shredded
1/4 cup of citron, chopped |

Combine honey, sugar, lemon juice and rind from the lemon. Beat in egg. Sift dry ingredients and add to egg mixture. Add citron and nuts and let stand one day (covered).
