Zucchini & Hominy

1/4 cup of onion, chopped,
2 tablespoons of margarine or butter
2 tablespoons of vegetable Oil
3 Zucchini; Md., *
2 cups of tomatoes, chopped
20 ounce can of Hominy, drained
2 tablespoons of lime Juice
1 tablespoon of Chile Powder
1 teaspoon of salt
a dash of pepper


* Cut the zucchini into 1/2-inch pieces. Cook and stir the onion in the margarine and oil in a 10-inch skillet over medium heat until tender. Stir in the remaining ingredients and cook uncovered, stirring occasionally, until the zucchini is tender, about 10 to 15 minutes.
