Zucchini Sandwich

I got this recipe from The Amish Cook that appears in our newspaper  weekly.


3 Eggs
3 Cups Shredded Zucchini
salt and pepper
 
Beat eggs and add Zucchini. Salt and pepper to taste. Drop by tablespoons  in
oil and fry till golden brown. Top with cheese. Eat as sandwich or with a 
meal for breakfast.   Enjoy
