| Seven Minute Zucchini
4 medium zucchini, grated 1 teaspoon of salt 1/2 pound of mushrooms 1/4 cup of butter 1/4 cup of sliced green onions 1 clove minced garlic 1/2 cup of sour cream 1 tablespoon of chopped fresh basil |

Combine the zucchini and salt, and let stand. Heat the mushrooms in a skillet, shaking over high heat until the liquid evaporates. Add butter to skillet. Squeeze excess liquid out of zucchini. Add to onions and mushrooms and stir occasionally over heat for 5 minutes. Stir in the sour cream and basil, heat and serve. Serves 3 -4
