1 package of frozen artichokes 1 4-ounce can of mushrooms, and liquid 1 green pepper, chopped 1 onion, diced 6 ounces of cooked-down tomato juice Sprinklings of Parmesan cheese, salt, pepper, and sweet basil
Sauté the onion and pepper in tomato juice for 5 to 10 minutes until they start to soften. Add the artichokes, mushrooms and liquid, salt, pepper, and sweet basil and cook, covered, until all the vegetables are done. If there is too much liquid, cook down for a few minutes, uncovered. Add sprinkle of cheese, stir, and serve. Serves 4. |
