| | Sweet Potatoes w/Cashew Nuts
Make a syrup of: 1 1/2 cups of light brown sugar 6 tablespoons of hot water Add: 1 1/2 tablespoons of lemon juice 11/2 teaspoons of grated lemon rind 1/2 teaspoon of salt 1/4 teaspoon of cinnamon
Layer into buttered casserole 6 precooked, peeled and sliced Sweet potatoes and the above syrup. Sprinkle each layer with part of the 1/2 cup of coarsely chopped Cashew nuts. Heat until bubbling - 350ºF. for about 20 minutes. Serves 8 |
