| Polynesian Yam Casserole
one 18 ounce can of yams, drained 1 medium banana, thickly sliced one 8 3/4 ounce can of pineapple tidbits 1/4 teaspoon of salt 1/4 cup of flaked coconut
Arrange yams and banana in a 10x6x1 3/4 inch baking dish. Pour pineapple with syrup over all, be sure the banana is moistened. Sprinkle with salt. Bake, uncovered, at 350ºF. for 1 5minutes. Sprinkle with coconut, continue baking 15 minutes longer. Makes 4 servings |
