Fresh Sweet Potato Pie

2 cups of mashed, cooked sweet potatoes (4 medium)
3 eggs
1 cup of packed brown sugar
1 teaspoon of salt
1/2  teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
1/4 teaspoon of ground ginger
1/8 teaspoon of ground cloves
1 cup of evaporated milk or light cream
1 unbaked 9 inch pastry shell
Pecans for garnish

Cook the sweet potatoes, bake in in preheated 350ºF. oven for 40 minutes or boil in water to cover for 20 minutes, until soft. Cool, peel and mash until smooth. In a large bowl, beat eggs with sugar, salt and spices. Add mashed sweet potatoes and evaporated milk, mix well. Turn into unbaked pastry shell. Bake in preheated 350ºF.  oven for 1 hour and 15 minutes or until the tip of a silver knife inserted in center comes out clean. Garnish with pecans. Serve with whipped cream of ice cream if desired. Makes one 9 inch pie, 8 servings
