Candied Yams

6 medium yams
3 cups of sugar
1 1/2 teaspoons of cinnamon
1/2 teaspoon of ground cloves
1/2 teaspoon of nutmeg
4 tablespoons of butter
6 cups of boiling water



Wash the yams and bring to a boil in enough water to cover. Boil for 5 minutes. Drain, cool, peel and slice in half lengthwise. Place the slices in a heavy 4 quart saucepan. Add the sugar, spices, butter and boiling water. Cook, uncovered for 1 1/2 hours or until the syrup has thickened and almost cooked away. Turn the yams occasionally during the last half of the cooking, but do not stir. Serves 6
