Spinach Quadrettini Basic-Recipes.com8/29/06

1/4 cup of olive oil
3 cloves garlic, crushed
3 diced celery stalks
1 pound of ground chuck or round
one 6 ounce can of tomato paste
1/2 teaspoon of pepper
2 boxes of frozen chopped spinach
1/3 cup of minced onion
1/2 cup of diced carrots
1/2 cup of sherry
1 large can of Italian tomatoes
1 tablespoon of salt
1 pound of medium noodles
1/2 cup of grated parmesan cheese

 

The day before or earlier in the day, sauté onion, garlic, carrots and celery in hot oil until soft. Add beef and cook until red color disappears. Add sherry and simmer for several minutes. Add the tomatoes, tomato paste, salt and pepper. Simmer uncovered for 2 hours, stirring occasionally. Refrigerate.

About 45 minutes before serving heat oven to 350ºF. Cook the noodles al dente. Cook the spinach till barely done. Drain both well. Add both to sauce. Place in 3 quart casserole and sprinkle with cheese on top. Bake uncovered for 30 minutes. Serves 6
