Chinese Spinach

 

Chinese Spinach

2 pounds of fresh spinach, washed and blanched
1 clove garlic, crushed
2 tablespoons of oil
1 jigger of bourbon whiskey
2 tablespoons of soy sauce





Drain spinach. Heat garlic in chafing dish with oil. Remove garlic, add spinach. Cook until spinach is bright green and wilted. Pour in bourbon and soy sauce. Heat a few minutes longer. Serves 4 -6
