| Chinese Spinach
2 pounds of fresh spinach, washed and blanched 1 clove garlic, crushed 2 tablespoons of oil 1 jigger of bourbon whiskey 2 tablespoons of soy sauce |

Drain spinach. Heat garlic in chafing dish with oil. remove garlic, add spinach. Cook until spinach is bright green and wilted. Pour in bourbon and soy sauce. Heat a few minutes longer. Serves 4 -6
