| Rutabaga Au Gratin
6 tablespoons of melted butter or margarine, divided 1/4 cup of all purpose flour 2 cups of milk 1 cup (1/4 lb.) shredded cheddar cheese 1 teaspoon of salt 1/8 teaspoon of pepper 4 cups of diced cooked rutabagas 1/2 cup of bread crumbs |
| Combine 1/4 cup butter and flour in a heavy saucepan over low heat. Cook 1 minute, stirring constantly. Gradually stir constantly. Gradually stir in milk; cook over medium heat stirring constantly, until smooth and thickened. Add cheese and seasonings, stirring until the cheese is melted. Place rutabaga in lightly greased 1 1/2 quart casserole; top with sauce. Combine bread crumbs with remaining 2 tablespoons butter; sprinkle over casserole. Bake at 400ºF. for 15 minutes. |
