| | Rice Pilaf
8 ounces of rice 2 tablespoons of vegetable oil 2 tablespoons of butter 1 onion 1/2 pound of mushrooms 3 stalks of celery juice & grated rind of 1 lemon 2 tablespoons of raisins 1/2 cup of peanuts 1 pound can of tomatoes 2 cups of water 2 bay leaves 1 tablespoon of Worcestershire sauce salt & pepper
Fry the rice in a heavy pan in the butter and oil, stirring well, until pale yellow. Add the chopped onion and garlic and cook 3 minutes. Slice mushrooms and celery and add all ingredients including the liquid from the tomatoes. Season well, cover and cook over low heat until the rice is soft and the liquid absorbed. Add more water if needed.
Serve with a meat dish or as a meal in itself. Add more vegetables and seasonings. Add chopped, dried fruits like peaches, prunes, apricots or apple slices. Garnish with slices of hard boiled eggs and bananas fried in butter. |
