Stuffed Sweet Potatoes

6 large sweet potatoes
3 tablespoons of butter
1/2 cup of sweet heavy cream

Scrub sweet potatoes well and bake at 350ºF.   until done. Gently open potatoes at one end and remove pulp and mash with other ingredients, refill and bake at 350ºF.  for 10 minutes more. Cut in half lengthwise and serve hot.
