Creamed Potato Soup

4 medium potatoes
1 teaspoon of salt
1 medium onion, chopped
1 tablespoon of butter
1 cup of light cream

Peel and cube the potatoes, then place in a large saucepan and add 4 cups of water and the salt. Bring to a boil, then cook until tender. Mash the potatoes in the stock. Sauté the onion in the butter until transparent, then add to the potatoes. Add the cream and heat thoroughly. Makes 6 servings
