Lyonnaise Potatoes

1 medium onion, sliced fine
2 tablespoons of  butter
4 cold, boiled potatoes
pepper to taste
1/4 teaspoon of rosemary
parsley

Fry the onion in the butter and cook until light brown. Slice the potatoes thin, sprinkle them with pepper and rosemary. Place in the frying pan and cook with onion until a rich golden brown. Garnish with parsley.  Serves 4 

Lyonnaise Potatoes is a French dish of sliced pan fried potatoes and thinly sliced onions, sautéed in butter with parsley and possibly other seasonings. "Lyonnaise" means "from Lyon", or "Lyon-style", after the French city of Lyon. The potatoes are par-cooked before sautéing for the best results. Source Wikipedia
