Mixed Greens w/Corn Bread Dumplings

2 pounds of turnip greens
1 pound of mustard greens
1 pound of spinach
1/4 cup of salt
1 pound of salt pork or bacon
1 small onion, chopped
salt to taste
2 tablespoons of sugar
Corn Bread Dumplings
2 teaspoons of crushed red peppers, optional

Strip the greens from the stalks and wash in cold water to which the 1/4cup of salt has been added. Wash 3 or 4 times more in cold water or until water is clear of grit and sand. Drain thoroughly. In a large 8 quart pot, put 2 quarts of boiling water, the rinsed salt pork or bacon, and the onion. Boil for 1/2 hour. Add all the greens, salt to taste, and the sugar. Cover tightly and simmer for 2 hours. If frozen greens are used, simmer for 1 hour. Make the dumplings, drop them in on top of the greens, cover tightly and simmer over low heat for 30 minutes. Add the crushed red peppers just before the dumplings for extra flavor. Serve the greens surrounded by the dumplings, with the salt pork or bacon sliced over the greens. Serves 6 - 8
