Oven Fried Potatoes

2 medium potatoes
3 tablespoons of butter
1/4 teaspoon of salt
1/8 teaspoon of white pepper
Paprika

Pare and slice potatoes in round slices 1/8 inch thick. Butter a 1 quart casserole. Add layers of overlapping potato slices. Dot each layer with butter, season with salt and pepper. Sprinkle with paprika. Cover casserole. Bake in a preheated 400ºF. oven for 30 minutes. Uncover, bake for 10 minutes more.

Oven Fried Potatoes 2

3 medium potatoes, peeled or unpeeled
1/2 teaspoon of salt
1/4 teaspoon of garlic powder
1/4 teaspoon of paprika
1/4 teaspoon of minced onion
1/4 teaspoon of pepper
1 1/2 tablespoons of safflower or canola oil
1 tablespoon of water
Vegetable cooking spray

Coat 13 x 9 inch baking dish with vegetable cooking spray. Slice potatoes in 1/8 inch wedges. Place wedges in a single layer in the baking dish. Combine other ingredients. Brush potatoes with oil mixture. Bake uncovered at 375ºF. for 50 minutes. Baste occasionally with oil mixture.  Yield 6 servings.
