Cucumber & Yogurt Salad

1 Cucumber
Salt
1 tablespoon of chopped fresh parsley
1 tablespoon of chopped fresh chives
2 teaspoons of chopped fresh dill or fennel
1 cup of plain yogurt
Pepper


Wash the cucumber and slice it finely or grate it fairly coarsely. Put the pieces in a colander, sprinkle them with salt, weigh them down, and leave for about 30 minutes to draw out excess moisture. Then rinse and squeeze the cucumber to extract as much liquid as possible. In a large bowl, combine the cucumber with all the other ingredients and season to taste.
