Cucumber Cinnamon Rings

2 gal. cucumber rings
15 cucumbers (older the better, even yellow ones)
2 c. dehydrated lime
8 1/2 quarts of  water

Peel cucumbers, remove seeds and centers, cut in 1/8 inch slices; make apple ring look. Put rings in lime water and let stand 24 hours. Drain rings, wash in cold water 3 times. Pour cold water over rings and soak 3 hours, cover with ice. Drain. 1 c. apple vinegar
2 bottles red food coloring
1 tbsp. alum and water to cover rings

Simmer, just below boiling for 2 hours. Drain and throw away liquid. 
SYRUP FOR RINGS:-

6 c. apple vinegar
6 c. water
7 1/2 lbs. sugar
15 or more sticks cinnamon, crushed in cloth
18 oz. (2 pkgs.) red hot cinnamon
drops

Bring to a boil, dissolving the cinnamon drops and pour over rings. Let stand overnight. Drain and reheat the syrup and pour over rings for 2 mornings, the third morning heat rings and syrup to boiling, pack in jars and seal.
