Braised Cucumber Sticks

Set out a heavy 8 inch skillet, with a tight fitting cover. Wash, score, cut off ends; cut 2 medium cucumbers into 4 inch lengthwise sticks. Meanwhile, heat in the skillet 1 tablespoon olive oil and 1 tablespoon butter or margarine. Add cucumber stir and lightly brown over medium heat, stirring occasionally. Dissolve 1 chicken bouillon cube, crushed in 2 tablespoon boiling water. Add to skillet, cover tightly and cook over low heat about 5 minutes or until cucumber is crisp and tender. Season to taste with seasoned salt and pepper. Top with parsley. Serve immediately.
