Cucumber Sandwiches

1 lg. cucumber, cleaned but not peeled
8 oz. cream cheese, softened
3 green onions, chopped
Mayonnaise as needed
Celery salt
Garlic powder
Paprika, if desired
Sandwich bread, white or other
 

Shred the cucumber and allow to drain over a paper towel until most of the liquid is gone. Mix the cream cheese and mayonnaise until smooth and spread-able. Stir in chopped onions and add garlic powder and celery salt as desired. Add drained cucumber, stir. May be spread on open faced sandwiches and topped with paprika or other garnishes or served between slices of sandwich bread cut into small, crust-less decorative shapes. Heart shapes are preferred by sick children, while adult guests usually eat triangles first. 

Cucumber Sandwiches

1 (8 oz.) pkg. cream cheese
1/2 c. mayonnaise 
1 envelope Good Seasons Italian Salad Dressing
French bread
Cucumbers
Dill Weed

Mix softened cream cheese, mayonnaise and Good Seasons mix. Spread on slices of French bread. Top with cucumber slices. Sprinkle dill weed. 

Cucumber Sandwiches

1 (8 oz.) pkg. cream cheese
2 tbsp. mayonnaise
1 sm. onion, chopped
3 med. cucumbers, chopped and seeded

Mix the above and spread on bread. Serve as finger sandwiches. 

Cucumber Sandwiches

1 loaf thin sliced cocktail rye bread
1 (8 oz.) pkg. cream cheese
1 pkg. Italian dressing seasoning mix
3 cucumbers

Mix cream cheese (room temperature) in with seasoning mix. Rinse and thinly slice cucumbers. Spread cream cheese mixture on cocktail bread and top with cucumbers. Refrigerate until serving.
