Spicy Red Cabbage

1 1/2 pounds of red cabbage
1/2 pound of onions, chopped
1 tart apple, peeled, chopped
1 cup of pitted prunes
1 garlic clove, crushed
1 teaspoon of ground cinnamon
1/4 teaspoon of ground cloves
1 teaspoon of ground cumin
1 teaspoon of ground coriander
2 tablespoons of  red wine vinegar
Nutmeg, to taste

Quarter, core and shred the cabbage. Place into a large pot. Add the onion, apple, prunes, garlic and spices. Mix thoroughly. Add 1/2 cup water and cover with a lid. Cook over medium heat for 2 hours. Stir frequently. Add water if needed.

This recipe yields 6 servings.
