Cauliflower Cheese  

1 cauliflower (2 1/2 - 3 pounds)
3 tablespoons of butter
2 tablespoons of flour
1/4 teaspoon of nutmeg
1 cup of milk
1/2 pound of sharp cheese
1 teaspoon of mustard
3 tablespoons of parmesan
salt and pepper

Boil the cauliflower in salted water until almost cooked, about 10 minutes. Drain well, separate into flowerlets and place in a well buttered baking dish. Melt the butter, add the flour, stirring well, and cook for 3 minutes but don't let it brown. Add the milk gradually and cook for 5 minutes, stirring constantly. Add nutmeg, mustard, salt, pepper and grated sharp cheese. Remove from heat, stir well and pour over cauliflower. Sprinkle with parmesan and bake in an oven preheated to 375ºF. for 20 minutes.

Use broccoli with or in place or the cauliflower. Add sliced mushrooms, sliced tomatoes or any vegetables you like. For a crusty top use breadcrumbs or cracker crumbs dotted with butter.
