| | Sweet and Sour Cold Beets
two 1-pound cans of whole beets (reserve 1 tablespoon of liquid) 2 envelopes of Sweet 'N Low 3 tablespoons of white vinegar 2 tablespoons of white horseradish salt, to taste
Grate the beets on the long, string side of a grater. Mix all ingredients with the beets. For a more moist mixture, add 1 tablespoon of beet liquid. Refrigerate and serve cold. Serves 4. |
