Savory Buttered Beets
6 beets 1/2 teaspoon of salt 1/2 teaspoon of celery salt 1/8 teaspoon of pepper 2 tablespoons of butter or margarine |

Wash and scrub the beets thoroughly. Rinse and drain. Grate on medium grater into saucepan. Sprinkle with seasonings. Dot with butter or margarine. Cover. Simmer over low heat about 30 minutes or until tender. Serve with a little vinegar or lemon quarters. Makes 4 - 6 servings. This vegetable is especially appetizing heaped in lettuce leaf. May be garnished with a dab of Hollandaise or mayonnaise.
