Baked Acorn Squash 2

2 large acorn squash
4 tablespoons of butter
1 cup of applesauce
2 tablespoons of brown sugar
1/4 teaspoon of ginger
1/4 teaspoon of cinnamon




Cut the squash in half lengthwise and remove the seeds and membrane. Mix the other ingredients and stuff into the cavities. Place in a shallow baking dish with 1 inch boiling water in the bottom and cover with foil. Bake in an oven preheated to 350ºF. for 35 minutes.

You can make the squash more savory by using just butter, garlic and plenty of herbs and seasonings. Or turn it into a meal in itself by stuffing with sausage combined with breadcrumbs, and egg and seasonings.
