Swedish Yellow Split Pea Soup
1/2 pound of yellow split peas, soaked and drained 2 small onions, chopped fine 1/2 teaspoon of thyme 1/2 teaspoon of powdered marjoram 2 whole cloves or 1/4 teaspoon of ground cloves 1 cup of diced 96% fat free ham 1/2 cup of evaporated skim milk, optional pepper
Place the soaked split peas, and next 4 ingredients with 1 1/2 quarts of water in a large saucepan. Bring to a simmer and cook for 1 hour. Remove whole cloves and puree the mixture in a blender or food processor until smooth, return soup to the pot. Simmer with the ham for 15 to 30 minutes more. Add milk, if you wish, and season to taste with pepper. 6 servings
