One Cup Navy Bean & Ham Soup
one cup of dried navy beans, soaked 1 cup of onions, finely chopped 1 cup of carrots, finely chopped 1 cup of celery, finely chopped 1 cup of white turnips, finely chopped 1 cup of fine diced white potatoes 1 bay leaf 1 cup of lean diced ham 1 cup of shredded lettuce pepper
Place beans and 2 1/2 quarts of water in a large saucepan and bring to a boil. Cut back to a simmer and cook gently, partially covered for 1 1/2 hours or until beans are tender. Add onions , carrots, celery, turnips, potatoes and bay leaf and simmer for 20 minutes more. Add ham and lettuce and simmer 5 minutes, season to taste with pepper and serve. Makes 8 servings
