Chilled Cucumber Chive Soup
1/2 cup of low fat cottage cheese 1/2 cup of light sour cream 2 cups of buttermilk 1/2 of an unpeeled English cucumber, diced 1/2 cup of chopped fresh parsley 1/4 cup of diced red radishes 1/4 cup of chopped fresh chives or scallions Salt and freshly ground pepper
In a blender or food processor process cottage cheese and sour cream until smooth, add buttermilk and process to mix. Transfer to bowl, stir in cucumber, parsley, radishes, and chives. Season with salt and pepper to taste. Refrigerate until chilled Makes 6 servings 3/4 cup each |
