Asparagus Soup

3/4 cup of water
3/4 teaspoons of salt
1 pound of fresh asparagus, cut in pieces
1 cup of milk
1 tablespoon of butter
parsley flakes


In saucepan, heat water and salt to boiling. Add asparagus, cover, and simmer 8 - 10 minutes, until asparagus is tender. Place asparagus and cooking water in blended container. Cover and blend on low speed until asparagus is finely chopped. Add milk, blend on high speed until smooth. Return soup to saucepan, add butter and heat through. Garnish with parsley.
