Hot Pasta Salad 8 ounces of thin spaghetti 1 quart of water 1 teaspoon of salt 1 1/4 cups of broccoli A pinch of nutmeg 1 clove garlic, peeled and finely chopped 6 tablespoons of olive oil 1/4 cup of vinegar 3/4 cup of diced Pecorino cheese or Parmesan cheese |

Cook the spaghetti in boiling, salted water until just tender, following package directions, drain. Place the remaining quart of water and 1 teaspoon of salt in separate saucepan and bring to a boil. Boil broccoli for 2 minutes, drain and sprinkle with nutmeg. Sauté the garlic in 1 tablespoon of olive oil for 30 seconds, remove from heat and add vinegar and remaining oil. Mix all ingredients together in salad bowl. Serve warm. Serves 4
Hot Pasta Salad 2
1 pound of sweet sausage 3 onions, chopped Minced garlic 1 box pasta 1 teaspoon of butter Olive oil Salt and pepper 1 head of broccoli
Heat butter and some olive oil in large skillet. Add 1 clove minced fresh garlic - sauté onions and sausage until cooked. In microwave - chop broccoli, put in a bowl, cover with Saran wrap, cook for 5 minutes. Add to sausage - stir well. Cook pasta - drain - put more olive oil to coat the hot pasta in a serving bowl. Add sausage mixture - mix well and serve - salt and pepper to taste. Serves 6.
Hot Pasta Salad 3
1 can tomatoes 1 stalk broccoli 1/2 head cauliflower 1 onion 1 clove garlic Fresh basil Italian seasonings to taste 1 can mushrooms 2 tablespoons of olive oil Pasta of your choice
Sauté' garlic, onions, in hot oil in fry pan. In another pan steam broccoli and cauliflower when done drain. Add tomatoes, basil and seasonings to garlic and onions. Add vegetables also, sauté for 1/2 hour and serve over your favorite pasta. Add Italian cheese.
Hot Pasta Salad 4
1/2 pound of rotini pasta 2 tablespoons of olive oil 1 green pepper, cut into strips 1 red pepper, cut into strips 1 medium onion 1/2 pound of fresh mushrooms, sliced 1 small zucchini, sliced (optional) 4 mild Italian sausages, casings removed, cooked and crumbled 1/4 cup of freshly grated Parmesan cheese 1/2 teaspoon of oregano 1 tbsp. basil Salt and pepper to taste Hot red pepper flakes (optional)
Cook pasta according to directions. Heat oil in frying pan and stir fry green pepper, red pepper and onion briefly, adding mushrooms and zucchini last. Cook for 1 minute. Toss pasta and sausage with cooked vegetables in large pot. Add cheese and seasonings. Toss again and serve immediately.
Hot Pasta Salad 5
(ITALIAN) 12 ounces of tri-color rotelli pasta 1/3 cup of olive oil 3 cloves garlic 2 medium onions 1 tablespoon of chopped fresh parsley 1 tablespoon of tomato paste 1/4 cup of water 4 tablespoons of wine 1 teaspoon of dried basil leaves 1/2 teaspoon of salt 1/2 teaspoon of dried rosemary, ground 1/4 teaspoon of dried thyme, ground 1/4 teaspoon of dried marjoram, ground 1/4 teaspoon of dried oregano, ground 1/4 teaspoon of black pepper 1/2 red bell pepper, chopped 1/2 green bell pepper, chopped 6 ounces of pitted or stuffed olives, drained & quartered
Cook pasta, drain and hold. In large skillet sauté oil, garlic, onions and parsley until tender. Combine tomato paste and water. Add the tomato paste mixture, wine and seasonings. Continue to simmer 5 to 7 minutes. Add bell peppers and olives. Simmer an additional 2 minutes until tender. Pour over pasta and serve. Serve hot or chill approximately 1 to 2 hours to serve cold. This is a family favorite. Great for vegetarians such as my daughter, but also enjoyed by carnivores like my son. Can be served as a main dish.
