Ann's Chicken Cranberry Salad

 

Ann's Chicken Cranberry Salad

Layer 1:
1 env. of Know gelatin
1/4 cup of cold water
one 1 pound can of whole berry cranberry sauce
one 9 ounce can of crushed pineapple
1/2 cup of chopped English walnuts
1 tablespoon of lemon juice

Dissolve gelatin in cold water, set over hot water. Add cranberry sauce, crushed pineapple, walnuts and lemon juice. Mix thoroughly. Spread in mold or 9" square Pyrex dish. Chill until firm.

Layer 2:
1 env. of Know gelatin
1/4 cup of cold water
1 cup of mayonnaise
1/2 cup of water
3 tablespoons of lemon juice
2 cups of diced cooked chicken
1/2 cup of diced celery
2 tablespoons of  chopped parsley
salt and pepper to taste

Dissolve gelatin in cold water. Blend mayonnaise, 1/2 cup of water and lemon juice. Stir in dissolved gelatin and mix well. Then add chicken, celery and parsley, salt and pepper to taste. Blend all ingredients well and pour over firm cranberry layer. Chill. when firm, cut in squares and serve on lettuce.
