| Carrot Salad
1 pound of carrots 1 bunch of chives, chopped 1 cup of mayonnaise 2 tablespoons of vinegar salt and pepper |

Peel and finely grate carrots. Combine the chives, mayonnaise, and vinegar, season with salt and pepper, blend with a whisk. Pour over carrots and let stand for 5 minutes. Serve. Serves 6 |
