| Pickled Albacore 2 cans albacore, 7 ounces each 1 large red onion, thinly sliced 2 green peppers, sliced 2 oranges, halved and sliced 1/4 cup of olive oil 1/2 cup of fresh lemon juice 1 cup of fresh orange juice 2 bay leaves 1/2 teaspoon of crumbled oregano 1/4 teaspoon of salt Salad greens |

Break the albacore into large pieces. Cover with slices of onion, green pepper and orange. Combine with the remaining ingredients except the greens and pour over fish. Refrigerate for several hours. Garnish with salad greens. Makes 4 - 6 servings as main dish, 8 servings as a side salad |
