Set oven at broil and /or 550ºF. Diagonally slash outer edge of fat on chops at 1 inch intervals to prevent curling. Sprinkle oregano on chops. Place the chops on rack in broiler pan. Broil with tops about 3 inches from heat until brown, about 6 minutes on each side. Season with salt and pepper. Season after browning, salt tends to draw moisture to surface and delays browning. Garnish with mint jelly. Makes 2 servings |
