Curried Orange Chicken

one 2 pound broiler fryer chicken, cut up
1/2 teaspoon of curry powder
1/4 cup of orange juice
2 tablespoons of honey
1 tablespoon of prepared mustard
2 teaspoons of cornstarch
1 tablespoon of cold water
1/2 orange, peeled, sliced and quartered

Sprinkle the chicken pieces with curry powder, rub the curry into meat. Arrange the chicken in a small baking dish, skin side down. Combine the orange juice, honey and mustard in small saucepan, simmer until blended. Pour over chicken, bake at 375ºF. for 30 minutes. Turn the chicken and continue baking for 20 minutes longer or until tender. Remove the chicken to serving platter, keep warm. In a small saucepan, combine the cornstarch and water, stir in pan juices from chicken. Cook and stir until thick and bubbly. Add the orange pieces, heat 1 minute. Pour sauce over chicken on platter or serve separately to be spooned over hot cooked rice. Makes 2 servings
