| Parsley New Potatoes 3/4 pound of tiny new potatoes 2 tablespoons of butter or margarine 2 tablespoons of snipped parsley 1 1/2 teaspoons of lemon juice Scrub or scrape the potatoes. Cook in boiling salted water until tender, about 15 to 20 minutes. Drain. Peel if desired. Meanwhile, melt the butter in a saucepan, stir in parsley and lemon juice. Pour over hot potatoes. Serves 2 |
