Broiled Lobster Tails Place 4 frozen 6 -8 pound rock lobster tails on cutting board. With a sharp knife, cut down through the center of hard top shell, cutting through meat, but not through under membrane Spread open, butterfly style, so that the meat is on top. Cover tail fans with foil. Brush the meat with melted butter, Broil 4 inches from heat about 17 minutes. Brush often with butter. Meat is done when it loses its translucency and can be flaked with a fork. Serves 2 Parsley New Potatoes 3/4 pound of tiny new potatoes 2 tablespoons of butter or margarine 2 tablespoons of snipped parsley 1 1/2 teaspoons of lemon juice Scrub or scrape the potatoes. Cook in boiling salted water until tender, about 15 to 20 minutes. Drain. Peel if desired. Meanwhile, melt the butter in a saucepan, stir in parsley and lemon juice. Pour over hot potatoes. Serves 2 Easy Grasshopper Pie 1/2 cup of chocolate wafer crumbs 1 tablespoon of butter or margarine, melted ------- 1/2 of 1 pint jar of marshmallow crème 1 tablespoon of green crème de menthe 1 tablespoon of white crème de cacao 1/2 cup of whipping cream, whipped Combine the wafer crumbs and butter or margarine, press into tow 4 1/2 inch tart pans. In a small mixer bowl, combine the marshmallow crème and liqueurs. Beat about 1 minute at high speed. Fold in the whipped cream. Pile into crumb crust. Freeze about 5 hours or overnight. If desired garnish with additional whipped cream. Makes 2 servings Blue Cheese Dressing Have 2 ounces of blue cheese, crumbles(1/2 cup) at room temperature. Blend in 1/4 cup of mayonnaise or salad dressing. Gradually stir in 1/2 cup of buttermilk, mixing thoroughly. Cover, chill. Makes 1 cup of dressing. |
