Sugar Cookies  9

1 cup of soft butter
1 2/3 cups of sugar
3 eggs
3 teaspoons of vanilla
3 cups of sifted flour
2 1/2 teaspoons of baking powder
3/4 teaspoon of salt

Beat butter and sugar until light and fluffy. Add eggs and vanilla and blend well. Sift together flour, baking powder and salt and add to butter-sugar mixture. Roll balls of dough the size of walnuts. Place on well-greased cookie sheet. Using any object with a round, flat bottom about the size of the cookie you want, grease (Pam is good for this) the bottom, dip into granulated sugar, and press down on cookie ball until about 1/8 inch thick. Must be dipped in sugar each time. Bake at 400ºF. for 8-10 minutes. Makes about 6 dozen cookies
