Cheese Soufflé  Basic-Recipes.com9/1/06

1/4 pound of margarine
1/4 cup of flour
1 cup of milk
4 eggs
cayenne
3/4 pound of cheddar cheese, grated

Melt the margarine in a saucepan, add flour stirring constantly. Add milk and stir until thick. Add the cheddar cheese. Stir until melted. Remove from heat. Add a few dashes of cayenne. Separate eggs, putting yolks in medium bowl  and whites in large bowl. Add the cheese mixture to beaten yolks. Wash beater and dry. Whip the whites until thick and stiff. Fold in the cheese mixture, add cheese to eggs, arrange in soufflé dish. Bake at 300ºF.  for 1 hour and 10minutes. Serve immediately. Goes great with a green salad, French Bread and red wine.

Tomato Cheese Soufflé - Substitute 1 cup of tomato juice for the 1 cup of milk
