Sourdough Biscuits >

Sourdough Biscuits 9

1 cup of flour
2 teaspoons of baking powder
1/4 teaspoon of salt
1/4 teaspoon of soda
1/3 cup of shortening
1 cup of Herman Starter

Mix dry ingredients. Cut in shortening. Add starter. Turn onto floured surface, and knead lightly. Shape and bake in greased pan at 400ºF. for 10-15 minutes. Makes 1 to 1 1/2 dozen. 

Sourdough Biscuits

1 cup of sourdough starter
1 teaspoon each of salt, sugar, and soda
1 tablespoon of shortening
3-4 cup of sifted flour

Place flour in a bowl; make a well in the center and add sourdough starter; stir in salt, soda, and sugar. Add shortening. Gradually mix in enough flour to make a stiff dough. Pinch off dough for one biscuit at a time; form a ball and roll it in melted shortening. Crowd the biscuits in a round 8 inch cake pan. Allow to rise in a warm place for 20 to 30 minutes before baking. Bake at 425ºF. until done.

Sourdough Biscuits

1/2 cup of starter
1 cup of warm milk
2 1/2 cups of flour
1 tablespoon of sugar
3/4 teaspoon of salt
1 tablespoon of baking powder
1/2 teaspoon of soda
Bacon grease, melted

Mix starter, warm milk, and 1 cup of the flour. Cover and let rise (overnight if for breakfast or all day if for evening meal). Combine 1/2 cup of the flour, sugar, salt, baking powder, and soda. Mix into starter, then turn out on remaining 1 cup flour. Knead until smooth and dough is a little sticky. Roll to 1/2 inch thickness; cut and dip into warm bacon grease. Place close together in pan and let rise 1 hour. Bake at 375ºF. for 30-35 minutes. Makes about 18 (2 1/2 inch) biscuits.
