Quick Chicken Fajitas
eight 7 inch flour tortillas 12 ounces of skinless, boneless chicken breast halves or turkey tenderloin steaks 1 tablespoon of lime juice or lemon juice 1/2 teaspoon of ground cumin 1/2 teaspoon of ground coriander 1/4 teaspoon of dried oregano, crushed 1/4 cup of clear Italian salad dressing 3/4 cup of red and or green sweet pepper cut into strips 1 small onion, halved and sliced Assorted condiments: salsa, sour cream, guacamole, jalapeno peppers Shredded lettuce, optional |

Wrap the tortillas in foil. Heat in a 350ºF. oven for 10 to 15 minutes or till heated through. Or, wrap in paper towels or waxed paper and heat in microwave over 100% power (high) for 15 to 20 seconds. Meanwhile rinse chicken or turkey, pat dry with paper towels. Thinly slice chicken or turkey into bite size strips. In a medium bowl combine the lime or lemon juice, cumin, coriander, and oregano. Stir in chicken or turkey, set aside. In a large skillet heat the salad dressing over medium high heat. Add chicken mixture. Cook and stir for 2 minutes. With a slotted spoon, remove chicken from skillet. Add sweet pepper and onion to skillet, cook and stir for 2 to 3 minutes or until crisp tender. Return chicken to skillet, heat through. Spoon the mixture onto warm tortillas, roll up. Top with favorite condiments. If desired, serve on a bed of shredded lettuce. Makes 4 servings
