Spinach Quiche Pie

Crust
1 1/2 cups of grated cheddar cheese
3/4 cup of flour
1/2 teaspoon of salt
1/4 teaspoon of dried mustard
1/2 cup of melted butter or margarine;
Filling
one 10 ounce package of  frozen chopped spinach
1/2 cup of milk
1/2 cup of Half and half
1/4 cup of chopped onion
1 teaspoon of salt
1/2 teaspoon of nutmeg
a dash of pepper

Prepare Crust: Mix the crust ingredients together. Knead and press into a pie pan. Set aside Prepare filling: Preheat oven to 400ºF.  Mix the filling ingredients in a saucepan. Heat while stirring constantly. Do not boil. Add three eggs slightly beaten that are room temperature. Stir. Add the spinach and stir gently. Pour this mixture into your pan. Bake pie for 15 minutes; reduce oven temperature to 325ºF.,  and bake an additional 25 minutes.
