Spinach Pesto
1 cup of cooked spinach
1 clove garlic 3 tablespoons of Parmesan cheese 1
tablespoon of lemon juice 1 tablespoon of dried basil 3
tablespoons of low-fat (or nonfat) yogurt A dash of pepper |

Squeeze cooked spinach until dry. Puree in blender or food processor
with garlic, cheese, lemon juice, basil, and yogurt. Season with pepper and
toss with cooked pasta. Makes about 3/4 cup
