Feta Cheese Triangles

1 pound of feta cheese, crumbled
2 egg yolks
1 whole egg
3 tablespoons of chopped parsley
a dash of finely ground pepper
3/4 pound of butter, melted
1 pound of filo
 

Mash the feta cheese with a fork. Add the egg yolks, egg, parsley and pepper. Melt the butter in a saucepan. Keep warm. Lay a sheet of filo onto a cutting board. Brush with the melted butter. Cut into strips about 1 1/2 to 2 inches wide. Place 1/2 teaspoon of the cheese mixture on each strip about 1 inch from the base. Fold, to form a triangle. Continue the process until all of the cheese and filo have been used. Place the triangles, side by side into a shallow roasting pan or baking sheet, Bake at 350 F. for about 20 minutes or until golden brown. Serve immediately, makes around 100 pieces
