12 manicotti shells 2 med. zucchini, diced 1/2 lb. mushrooms, chopped 1 garlic clove, crushed 3-4 tbsp. margarine 1 1/2 c. cottage cheese 1 1/2 c. shredded Cheddar cheese 1 1/2 c. marinara sauce |
| Preheat oven to 375ºF. Cook manicotti shells in 4 quarts boiling water for 10 minutes until almost tender. Drain and rinse with cold water. In a large skillet, sauté zucchini, mushrooms and garlic in margarine. Stir in cottage cheese and 1 cup of Cheddar cheese. Stuff manicotti with this vegetable/cheese mixture. Arrange in single layer in shallow 2 quart baking dish. Spoon sauce over manicotti. Cover and bake for 30 minutes. Uncover and sprinkle with remaining cheese. Bake 10-15 minutes longer until hot and bubbling. Serves 4-6. | |
