| Italian Manicotti
1 pkg. manicotti noodles 1 lb. hamburger 2 (8 oz.) shredded Mozzarella cheese 24 oz. cottage cheese 1 c. Hellmann's mayonnaise 2 tbsp. grated Parmesan cheese Large bottle Ragu, extra thick and zesty 1/8 to 1/4 tsp. herbs of each garlic, powder basil, oregano 1/4 c. chopped onion |
| Cook noodles until soft but firm. Simmer Ragu for 1 hour, add 2 tablespoons butter, handful onion flakes, pinch of basil. Brown hamburger add herbs while browning, drain. Mix cottage cheese, mayonnaise, Parmesan cheese and 1 package Mozzarella cheese. Combine hamburger and cheese mixture. Stuff noodles with mixture, lay in 9 x 13 pan. Cover all noodles with sauce. Bake at 350ºF. for 45 minutes uncovered last 15 minutes. Cover with other package of Mozzarella cheese.Italian Manicotti
1 to 2 cans water 1 (8 oz.) can tomato sauce 1 (6 oz.) can tomato paste 1 tsp. salt 1/4 tsp. pepper 1/4 tsp. sweet basil Dash of crushed red pepper
FILLING: 1/4 lb. ground beef 1 lb. bulk Italian sausage 1 egg, beaten Salt & pepper 1/2 c. dry bread crumbs 1 tsp. crushed parsley
1 lb. grated Parmesan cheese Cook sauce 3/4 hour while preparing the filling and stuffing the manicotti. Do not cook filling; only mix. Stuff raw manicotti noodles. Set in rows in 9 x 13 inch pan. Pour sauce over and sprinkle with grated cheese. Cover pan tightly with foil. Bake 2 1/2 hours at 250ºF. Serves 6. Italian Manicotti
12 oz. cottage cheese 1 pkg. chopped spinach, frozen 2 eggs 1 tsp. salt & pepper 1 lb. ground beef 1 onion, chopped 1 clove garlic, minced 3 c. water 2 (8 oz.) cans or 1 (15 oz.) can tomato sauce 1 can tomato paste 1 pkg. spaghetti sauce mix 1 lb. manicotti 1/2 lb. Mozzarella cheese
Combine cottage cheese, spinach, eggs, salt, pepper in bowl. Stir until blended; set aside. Sauté ground beef, onion and garlic. Add water, sauce, paste and sauce mix. Stir, cover and simmer 20 minutes. Cook manicotti, a few at a time. Fill with cheese mixture. Arrange in single layer. Spoon sauce over. Bake at 350ºF. for 30 minutes. Remove cover. Sprinkle Mozzarella cheese on and bake until it melts. |
