Southern Style Beef Liver

1 1/2 pounds of beef liver, sliced
2 quarts of rapidly boiling water
salt and pepper to taste
1 cup of flour
3 tablespoons of shortening
1 teaspoon of monosodium glutamate

Pour boiling water over liver and let stand for 10 minutes. Drain well; peel off any skin. Season liver with salt and pepper. Put flour into paper bag, drop in liver slices and shake well to coat liver thoroughly. Brown liver well in shortening on both sides. Add hot water to barely cover; sprinkle monosodium glutamate over all slices. Cover and let simmer for 30 minutes. Serve piping hot. Serves 4.
